Chili is the simplest but most delicious meal you can make. It comes out to be very hearty and filing. The beautiful thing about chili is you can make it vegetarian or vegan very easily. However, here I used chili beans that had little chunks of meat in it. Let me tell you how I made it:
- 1-2 Cans of Black Beans
- 2 cans of Chili Beans
- 1 can of Diced Tomatoes
- 2 carrots chopped
- 1/2 jalapeño deseeded and chopped
- 1/2 of a yellow onion minced
- 3 cloves of garlic minced
- Balsamic Vinaigrette
- 2 Tablespoons of ketchup
Start with sautéing the onions in the balsamic vinaigrette until they become fragrant. Add in the garlic once the onions become translucent. Add carrots and jalapeños and cook them down. Then add in the beans and tomatoes. Mix well.
Cook until everything is at a combined well and at the same consistency. Add ketchup for thickness and color. Season to taste.
The reason why so much of this is cans, is because I first made this recipe in college and all of the ingredients except for the jalapeño and garlic came from our local pantry.
The yeast roll recipe was found on allrecipes and I topped it with honey butter.
